Essential Sri Lankan Ingredients: A Guide for Curious Food Lovers

Essential Sri Lankan ingredients explained: rice, coconut milk, grated coconut, red lentils, curry leaves, spices, chilli and lime.

Traditional Sri Lankan spices and cooking ingredients

A handful of ingredients does a lot of work in a Sri Lankan kitchen. Knowing them helps you understand local food and cook it at home.

Rice

The base of most meals, served with several curries and sides.

Coconut milk

Adds richness and smooth texture to curries and some sweets.

Grated coconut

Adds texture and flavour to pol sambol, pol roti and pittu.

Red lentils

The heart of dhal curry. They cook down soft and take on seasoning beautifully.

Curry leaves

Fragrant leaves added during tempering. Fresh ones smell stronger than dried.

Cinnamon, cardamom, cumin and coriander

Warm, sweet, earthy and citrusy. Their combination depends on the recipe.

Turmeric and black pepper

Turmeric gives colour and earthiness. Pepper gives a sharp warmth, different from chilli.

Chilli and lime

Chilli brings heat; lime brings brightness. Both are easy to adjust.

How they work together

Coconut may soften spices, lime may lift a sambol, curry leaves may perfume a dish. Timing and technique matter as much as the list.
